The call-backs
Four licences drew a recommended administrative complaint inside the window, and three of them were visited again inside it. AC Kitchen at AC Hotel St Augustine drew one on Sept. 28 and complied on Sept. 29. O C Whites drew one on Sept. 29 and complied on Oct. 1. French Pantry / Little Miss Ha / Cache Cache / La Petite Kitchen drew one on Oct. 1 and complied on Oct. 2. All three of those results read Call Back - Complied in the state file. Southern Grounds & Co drew one Sept. 29. The file carries no later visit.
Three licences took a Warning Issued, and one of the three was back inside the window. Castillo Resort Hotel and Lulabelle’s Ice Cream each took one on Sept. 30, and no later visit is recorded for either of them. Murf’s Homestyle Togo took one on Oct. 1 and complied on Oct. 2.
Two call-backs in the window did not close. Salata in Ponte Vedra Beach was on visit 3 on Sept. 30, and the state recorded Call Back - Admin. complaint recommended. Mojos Tacos was on visit 2, and the state recorded Call Back - Extension given, pending. The table carries one apiece and neither count is high priority. No result in the window is an emergency order.
What the state’s words mean
Every definition below is the department’s own wording.
Inspection Completed - No Further Action. Conditions “did not warrant a follow-up visit to ensure correction.” The establishment is inspected again at the next routine interval.
Call Back - Complied. A return visit “found violations to be corrected.”
Warning Issued. The inspector “documented violations that must be corrected by a certain date.” The clock runs from receipt of the inspection report.
Administrative complaint recommended. High priority violations were found. They “require administrative action to ensure compliance.”
Call Back - Admin. complaint recommended. The operator “has not corrected the violations found in the initial inspection,” and further action is needed to ensure compliance.
Violations are classed three ways on that same page. High Priority violations “could contribute directly to a foodborne illness or injury.” Intermediate violations “could lead to risk factors that contribute to foodborne illness or injury.” Basic violations are “those which are considered best practices to implement.”
How often a kitchen is inspected
Every regulated public food service establishment gets “between 1-4 unannounced inspections each year” under a risk-based frequency the department sets. The number turns on the food used, how it is prepared, and the establishment’s own compliance history. A complaint can add a visit on top.
Level 3 covers an establishment serving a highly susceptible population, and one with “a history of non-compliance.” The department defines that second condition as three or more disciplinary actions over a two-year period. Level 4 covers an establishment the Florida Department of Health has named in a confirmed foodborne illness.
